A Culinary Journey Through Art and Heritage
My academic background culminated in art history, right here in Malta. I learned about our roots, our heritage, our culture, and our pride. A sacred practice held close to the heart by art historians is the Art of Cataloguing. This process involves documenting an artist’s repertoire chronologically, noting key materials used. Each entry ties a storyline to various aspects—social, political, religious, cultural, or otherwise. The details were all… detailed.
However, the culinary arts, particularly in Malta, lack this documentation. That makes me sad. The Art of Cataloguing, as envisioned by bajtra, aims to create a curated collection of culinary creations from our celebrated chefs' kitchens. Each entry will detail the ingredients presented on a dish, their sourcing, and the technical manipulation involved in preparation and cooking. Special details will highlight what gives each dish its signature notes.
bajtra will present all Catalogue Entries as annotated images. These images will capture the stillness of the dish while evoking the dynamic energy of plating, the thoughtful selection of ingredients, and the mastery of every technique used. As for the element of taste… my humble words will attempt to metamorphose flavor into text, immortalizing the concept as an appreciation of the times.
Chefs as Artists
Chefs are artists in my opinion—well, the good ones, of course. There are cooks who become chefs, cooks who remain cooks, and some who are just kooks. Just like in every realm of art, talent prevails, and aesthetics play a significant role. But what truly makes a work of art, even in the form of plated cuisine, is heart ❤️.
We’ve all watched FX’s The Bear and had our own takes on it. A resonating quote by the iconic Thomas Keller reads:
“Do you know why cooks cook? We cook to nurture people. I know people call me a chef, but our trade is cooking, and that to me is such a profound profession because we get to really be a part of people's lives in significant ways.”
