The Creation of bajtra 🌵

In 2024, I dined in most of Malta and Gozo’s finest restaurants, experiencing tasting menus paired with the finest wines and carte blanche displays of the kitchens’ performances. Some were inspirational, some very exciting, some slightly disappointing but most the pinnacle of excellence; from service to ambience, interior to tableware, everything makes a difference. 

The Creation of bajtra.

The lasting magical memories that sit with me a little over a year later are encapsulated in the flurry of aromas, intricate plating, flavour profiles and orchestrated service; married with vintages that broadened my palate. 

Every dish prepared by the esteemed Chefs I’ve grown to know, grow fond of and build respectable and genuine relationships with nourishes my palate; and therefore my soul. I am indebted to you and ever grateful for the passion and determination you charge with through your, usually tiny, kitchens. Without you, I could never achieve my purpose. 

bajtra is led by me, Kristina and my inherent need for expression cannot be suppressed. Through this platform I will share all the nuances that I have developed over the past 10 years working in the culinary industry. I may not have been in the kitchens, unless as an observer, but I have tasted, analysed, criticised, valued and fantasised about many a dish in my days. bajtra is where it all comes out. Where I will tell you the truth, where I will emphasise the excellent and where I will give you new paths and routes to adventure through.

Here, on this digital magazine; are the moments that gave me that ‘tax-xewk’* feeling; sending goosebumps down my spine, giving my soul a boost of energy and a reason for being. *I’d get used to this expression, I’ll be using it a lot–but only when deserved.
